SUSHI BATTLE 2012




Once again, it's the time of the year when I go around eating sushi This year, we will be having TUNA NIGIRI SUSHI (鮪握り寿司)
好例の食べ歩きバトルが帰ってきました!今年は鮪握り寿司。

NIGIRI SUSHI consists of an oblong mound of sushi rice that the chef presses into a small rectangular box between the palms of the hands, usually with a bit of wasabi, and a topping (the neta) draped over it. Neta are typically fish such as salmon, tuna or other seafood.
握り寿司は、シェフの手のひらの中で長方形に形作られたシャリの上に、少々のワサビ、そしてネタを乗せて出来上がり。メインなネタはサーモンや鮪などがあります。



How do we tell that a tuna is fresh? どうやって鮪の鮮度を見極めるか?
Only by smell, texture and taste
NEVER JUDGE A TUNA BY ITS APPEARANCE!
A chocolate coloured tuna only indicates oxidation of proteins
Fish industries often lace tuna with carbon monoxide to keep it deep red
It should have a pleasant fishy smell, strong flavour and firm flesh that is free of dry or brown spots

少し黒味がかかった鮪はたんぱく質が酸化している証拠。

魚業界では、鮪を真っ赤な色に保つためにそれを一酸化炭素加工します。
そうして加工された鮪は心地よい魚の匂いと強い風味、そして魚肉はまったくもって乾燥もせず茶色のまだら模様も付きません。

Today we have tasted some really good maguro nigiri zushi and some brutally bad ones!
One had a lil bug flying inside it's lid and another has obviously been frozen for ages..

MOS BURGER (CBD)


MOS Burger (モスバーガ) is easily one of Singapore's favourite fastfood restaurant
Originated from Japan, their CBD flagship store opened in Brisbane after it's first store in Sunnybank
The store is located on Queen Street Mall, in the spot of the old Krispy Kreme


















I had one of their signature burgers, YAKINUKU RICE BURGER
(grilled strips of beef)
for lunch today!
The outlet still does not have ICE MILK TEA though.
I personally feel that they serve healthier burgers,
let's hope that they help solve Australia's obesity problem LOL!

LAKSA NIGHT 2012


Singaporeans gathered last night for LAKSA NIGHT 2012


What is LAKSA?
Laksa is a popular spicy noodle soup from the Peranakan culture, which is a merger of Chinese and Malay elements found in Malaysia and Singapore.
Curry laksa (in many places referred to simply as “laksa”) is a coconut-based curry soup. The main ingredients for most versions of curry laksa include bean curd puffs, fish sticks, shrimp and cockles. Some vendors may sell chicken laksa. Laksa is commonly served with a spoonful of sambal chilli paste and garnished with Vietnamese coriander, or laksa leaf, which is known in Malay as daun kesum.

If you wanna cook your own LAKSA,
here's what you need (4 serves):

2 lemon grass (serai)
2 inch galangal (lengkuas)
6 candlenuts (buah keras)
10 shallot (bawang merah)
20 cloves garlic
15 dried chillies or 2 tbsp ground chilli powder
5 fresh red long pepper or chili boh
2 tsp of fine shrimp paste
1 tbsp tumeric powder or 2 thumb size pieces fresh tumeric (kunyit)
2 tbsp coriander (ketumbar) powder
4 ozs dried prawns, ground finely
2 shrimp Knorr Cube
2 can coconut milk
Salt and sugar to taste
1 packet daun kesum (laksa leaves)

Discarded prawn heads and shells can be used to cook flavourful prawn stock
which can be used as soup base prawn noodle or tom yum soup etc
HOW? Simmer heads/shells with garlic, onions, ginger, sugar, pepper, fish sauce, oil, chinese wine and of course water, for about 2 hours - TOO EASY!

Dessert was Red Velvet Cupcakes with Cream Cheese Frosting
Red Velvet is a light cocoa and vanilla flavoured moist cake topped with a white fluffy cream cheese frosting.
The red colouring originally came from the cocoa, however, the bold colouring is achieved nowadays with very liberal use of red food colouring. [SOURCE]
